Chinese broccoli (Gai Lan)
trimmed, tough stems removed

vegetable oil
or any neutral oil

oyster sauce

soy sauce

sesame oil
Instructions
Wash and trim the Chinese broccoli, discarding any tough stems. Cut into 3-4 inch pieces.
Heat a large skillet or wok over medium-high heat. Add the vegetable oil.
Add minced garlic to the skillet and stir-fry for 30 seconds until fragrant.
Add the Chinese broccoli to the skillet. Stir-fry for 2-3 minutes, stirring frequently, until the broccoli is bright green and slightly tender.
In a small bowl, mix oyster sauce, soy sauce, sugar, water, and sesame oil. Stir to combine.
Pour the sauce mixture over the Chinese broccoli. Stir well to coat evenly.
Continue stir-frying for an additional 2-3 minutes until the sauce thickens slightly and the broccoli is tender-crisp.
Remove from heat and serve immediately as a side dish or over steamed rice.
Notes
For a vegetarian version, replace oyster sauce with vegetarian mushroom sauce. Adjust seasoning if necessary.
