Spicy Shrimp Po' Boy Sandwich

Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground
  • 1 cup vegetable oil for frying
  • 4 French bread rolls split lengthwise
  • 1 cup shredded lettuce
  • 1 tomato sliced
  • 1 cup remoulade sauce

Instructions
 

  • Place the shrimp in a mixing bowl and pour the buttermilk over them. Let them sit for 10 minutes to soak.
  • In a shallow bowl or plate, combine flour, cornmeal, Cajun seasoning, paprika, salt, and black pepper.
  • Heat the vegetable oil in a frying pan over medium heat until it reaches 350°F (175°C).
  • Remove shrimp from the buttermilk, allowing excess to drip off. Dredge each shrimp in the flour and cornmeal mixture, coating evenly.
  • Fry the shrimp in batches for 2-3 minutes per side, or until golden brown and crispy. Remove and drain on a paper towel-lined baking sheet.
  • Toast the French bread rolls lightly if desired.
  • Spread remoulade sauce generously on the inside of each roll.
  • Layer with shredded lettuce, sliced tomatoes, and fried shrimp.
  • Serve immediately and enjoy your spicy shrimp po' boy sandwich!

Notes

For extra heat, add hot sauce to the shrimp marinade or use a spicy remoulade sauce. Serve with fries or coleslaw on the side for a complete Southern meal.
