Reishi Mushroom Soup

Ingredients
  

  • 1 reishi mushroom dried, about 2-3 slices
  • 2 tbsp olive oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 1 inch ginger sliced
  • 2 cups cremini mushrooms sliced
  • 6 cups vegetable broth low sodium
  • 1 tbsp soy sauce
  • 1 tsp sesame oil toasted
  • 1 cup spinach fresh
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and sliced ginger, cooking for another 2 minutes.
  • Add the cremini mushrooms and sauté until softened, about 5 minutes.
  • Pour in the vegetable broth and stir in the reishi mushroom slices. Bring the mixture to a boil.
  • Reduce the heat to low, cover, and let it simmer for 30 minutes to extract the flavors.
  • Remove and discard the reishi mushroom slices. These are tough and not edible.
  • Stir in soy sauce, sesame oil, and fresh spinach. Cook for another 2 minutes until the spinach wilts.
  • Season with freshly ground black pepper to taste, then serve warm.

Notes

You can garnish the soup with sliced green onions or a drizzle of sesame oil for extra flavor. Feel free to add tofu or noodles for a heartier meal.
