Mediterranean Quesadillas

These Mediterranean Quesadillas are a delicious fusion of classic Mexican and fresh Mediterranean flavors. Perfect for a quick lunch or light dinner!

Ingredients
  

  • 4 large flour tortillas
  • 1 cup feta cheese crumbled
  • 1 cup mozzarella cheese shredded
  • 1 cup cherry tomatoes halved
  • 0.5 cup black olives sliced
  • 0.5 cup red onion thinly sliced
  • 1 cup baby spinach leaves fresh
  • 1 tbsp olive oil
  • 1 tbsp oregano dried
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions
 

  • In a mixing bowl, combine feta cheese, mozzarella cheese, cherry tomatoes, black olives, red onion, spinach, olive oil, oregano, salt, and black pepper.
  • Lay a tortilla flat on a clean surface. Spread a layer of the cheese and vegetable mixture evenly over half of the tortilla.
  • Fold the tortilla in half to cover the filling and gently press down.
  • Heat a large skillet over medium heat. Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  • Remove the quesadilla from the skillet and repeat with the remaining tortillas and filling.
  • Cut the quesadillas into wedges and serve warm.

Notes

For an extra kick, serve with tzatziki sauce or a drizzle of hot sauce on the side. Add grilled chicken or chickpeas for more protein!
