Ingredients
  

  • 1 cup rolled oats
  • 1 cup medjool dates pitted
  • 2 tbsp maca powder
  • 2 tbsp chia seeds
  • 2 tbsp coconut oil melted
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • pinch sea salt

Instructions
 

  • Add the rolled oats to a food processor and pulse until they are coarsely ground.
  • Add the medjool dates, maca powder, chia seeds, melted coconut oil, maple syrup, vanilla extract, and a pinch of sea salt to the food processor.
  • Blend the mixture until it forms a sticky, dough-like consistency. If the mixture is too dry, add a teaspoon of water at a time until it holds together.
  • Using your hands, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
  • Place the energy balls onto a plate or parchment paper and chill in the refrigerator for at least 20 minutes to firm up.

Notes

These energy balls can be stored in an airtight container in the refrigerator for up to 1 week or frozen for up to 3 months. For variation, you can add cacao powder or shredded coconut.
