Instructions
Season both sides of the chicken breasts with salt and black pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
Reduce heat to medium and add the remaining tablespoon of olive oil to the skillet. Stir in garlic and cook for 30 seconds until fragrant.
Pour in the chicken broth and whisk in the lemon juice and lemon zest. Bring the mixture to a simmer.
Add the butter to the skillet and stir gently until melted and incorporated into the sauce.
Return the chicken breasts to the skillet, spoon the sauce over the chicken, and cook for another 2-3 minutes to heat through.
Transfer the chicken to a serving plate and garnish with freshly chopped parsley. Serve immediately.
Notes
For an extra touch of flavor, you can add a pinch of red pepper flakes to the sauce for a slight kick.
