Lemon Garlic Chicken

Ingredients
  

  • 4 chicken breasts boneless and skinless
  • 2 tbsp olive oil divided
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cloves garlic minced
  • 1/2 cup chicken broth low sodium
  • 1 lemon juiced
  • 1 tbsp lemon zest freshly grated
  • 2 tbsp butter unsalted
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Season both sides of the chicken breasts with salt and black pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the chicken breasts to the skillet and cook for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  • Reduce heat to medium and add the remaining tablespoon of olive oil to the skillet. Stir in garlic and cook for 30 seconds until fragrant.
  • Pour in the chicken broth and whisk in the lemon juice and lemon zest. Bring the mixture to a simmer.
  • Add the butter to the skillet and stir gently until melted and incorporated into the sauce.
  • Return the chicken breasts to the skillet, spoon the sauce over the chicken, and cook for another 2-3 minutes to heat through.
  • Transfer the chicken to a serving plate and garnish with freshly chopped parsley. Serve immediately.

Notes

For an extra touch of flavor, you can add a pinch of red pepper flakes to the sauce for a slight kick.
