Korean BBQ Tacos

These Korean BBQ Tacos combine sweet and savory marinated beef with fresh toppings, all tucked into a soft tortilla. A fusion dish that's sure to impress!

Ingredients
  

  • 1 lb ribeye steak thinly sliced
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp sesame oil
  • 3 tbsp brown sugar
  • 3 cloves garlic minced
  • 1/2 tsp ground ginger
  • 1 tbsp rice vinegar
  • 8 flour tortillas small size
  • 1 cup kimchi chopped
  • 1/2 cup shredded carrots
  • 1/4 cup green onions sliced thin
  • 2 tbsp sesame seeds
  • 1/2 cup spicy mayo optional, for drizzle

Instructions
 

  • In a mixing bowl, combine soy sauce, sesame oil, brown sugar, minced garlic, ground ginger, and rice vinegar to create a marinade.
  • Add the thinly sliced ribeye steak to the marinade and toss to coat. Let it marinate for 15 minutes.
  • Heat a large skillet or grill pan over medium-high heat.
  • Cook the marinated steak in the skillet for 2-3 minutes per side until caramelized and cooked through.
  • Warm the flour tortillas in a pan or microwave.
  • Assemble the tacos by placing the cooked steak in each tortilla, then topping with kimchi, shredded carrots, sliced green onions, and sesame seeds.
  • Drizzle with spicy mayo if desired and serve immediately.

Notes

For added flavor, you can grill the tortillas directly over a flame for a slight char. Substitute chicken or tofu for a different protein option.
