Ingredients
  

  • 2 chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 6 cups mixed greens
  • 1 cucumber sliced
  • 1 red bell pepper sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup balsamic vinaigrette
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Preheat your grill or grill pan to medium-high heat.
  • Rub the chicken breasts with olive oil, then season evenly with paprika, garlic powder, salt, and black pepper.
  • Place the chicken on the grill and cook for 6-8 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  • Remove the chicken from the grill and let it rest for 5 minutes before slicing into strips.
  • In a large serving bowl, combine mixed greens, cucumber, red bell pepper, cherry tomatoes, and red onion.
  • Top the salad with the sliced grilled chicken, crumbled feta cheese, and chopped parsley.
  • Drizzle with balsamic vinaigrette just before serving. Toss gently to combine, if desired.

Notes

Feel free to substitute goat cheese for feta or add sliced avocado for extra creaminess. To save time, use store-bought grilled chicken.
