Instructions
Heat olive oil in a skillet over medium heat.
Add ground lamb and cook, breaking up with a spoon, until fully browned, about 7-8 minutes.
Stir in minced garlic, oregano, ground cumin, and cinnamon (if using). Cook for 1-2 more minutes until fragrant.
Warm tortillas in a dry skillet or microwave for a few seconds until pliable.
Assemble the tacos by spreading a spoonful of tzatziki sauce onto each tortilla.
Add a portion of the cooked lamb, followed by cherry tomatoes, cucumber, red onion, olives, and feta cheese.
Garnish with fresh parsley and serve immediately.
Notes
For a vegetarian option, replace the ground lamb with spiced roasted chickpeas or grilled vegetables.
