Creamy Lemon Garlic with Salmon

Ingredients
  

  • 4 fillets salmon skinless, about 6 oz each
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth low sodium
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest grated
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground, or to taste
  • 1 tbsp butter
  • 2 tbsp parsley chopped, for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the salmon fillets with salt and pepper on both sides.
  • Place the salmon fillets in the skillet and cook for 3-4 minutes per side or until golden and cooked through. Transfer the salmon to a plate and set aside.
  • In the same skillet, reduce the heat to medium and melt the butter.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Stir in the heavy cream, chicken broth, lemon juice, and lemon zest. Whisk well to combine.
  • Bring the sauce to a gentle simmer and cook for 3-5 minutes, allowing it to thicken slightly.
  • Return the salmon fillets to the skillet and spoon the sauce over them. Cook for an additional 2-3 minutes until the salmon is warmed through.
  • Garnish with chopped parsley and serve immediately. Pair with rice, pasta, or steamed vegetables.

Notes

For a dairy-free option, substitute heavy cream with coconut cream. You can also add capers for extra flavor.
