This delightful caprese sandwich with basil pesto combines fresh mozzarella, juicy tomatoes, and aromatic basil pesto for a perfect Italian-inspired lunch or snack.
Spread basil pesto evenly on one side of each bread slice.
Layer 2 slices of fresh mozzarella, 3 basil leaves, and a few sliced tomatoes on top of a bread slice (pesto side up).
Place another slice of bread (pesto side down) on top to create a sandwich.
Heat a large skillet or grill pan over medium heat and drizzle with olive oil.
Place the sandwiches in the pan and cook for 2-3 minutes on each side, pressing gently with a spatula until the bread is golden and crispy and the cheese is melted.

For extra flavor, drizzle balsamic glaze on the tomatoes before assembling the sandwich.
