Benihana Fried Rice

This flavorful Japanese-style fried rice, inspired by Benihana, is packed with vegetables, egg, and savory seasonings for the perfect side or main dish.

Ingredients
  

  • 2 cups cooked white rice preferably day-old
  • 2 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1/2 cup frozen peas
  • 2 eggs beaten
  • 3 tbsp soy sauce low sodium
  • 1 green onion sliced
  • 1 tbsp butter
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp pepper freshly ground

Instructions
 

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the diced carrot and cook for 2-3 minutes until slightly softened.
  • Stir in the minced garlic and peas, cooking for another 1-2 minutes.
  • Push the vegetables to one side of the skillet and add the remaining tablespoon of oil.
  • Pour in the beaten eggs and scramble until cooked through, then mix with the vegetables.
  • Add the day-old cooked rice to the skillet and stir everything together.
  • Pour in the soy sauce and season with salt and pepper, mixing well to combine.
  • Stir in the butter until melted, and then garnish with sliced green onions before serving.

Notes

For additional flavor, you can add diced chicken, shrimp, or tofu. Serve with extra soy sauce or a sprinkle of sesame seeds for garnish.
